Garden Harvest


Fresh cucumbers and string beans picked from the garden.

Time to make a cold Cucumber Soup
Prep Time: 20 minutes


Ingredients:

* 2 garlic cloves, minced
* 2 green onions, chopped
* 1/2 tsp. salt
* dash white pepper
* 2 Tbsp. olive oil
* 1 cup plain yogurt
* 2 cups buttermilk
* 1 cup chicken or vegetable stock
* 2 Tbsp. lemon juice
* a sprig of mint, crushed
* 1/4 cup of fresh chopped dill
* 4 cucumbers, peeled, seeded, and sliced


Preparation:
In blender or food processor, combine all ingredients and blend or process, using on and off function, until soup is of desired consistency. This soup should be chilled for a few hours before serving. Makes a big pot.

Dear Sal, I will surely make this delicious sounding soup when my cucumbers come in.

Do you have any ideas for zucchini and better boy squashes? I am inundated with them. Can;t keep up! Help!
