Breakfast for one



Pouffy egg with shrimp


1 egg
1/2 cup no fat cottage cheese
3-4 shrimp peeled and chopped


beat everything together and scramble up in a pan.
voila!

It's what I have almost everyday (minus the shrimp). Th cottage cheese increases the fluff and volume of just one egg.

Do you ever use feta cheese? I got a big bag of feta cheese a while back, that had tiny pieces of kalamata olive and sun dried tomato in it. Mmmm, so deliciously good.

The variations could be infinite! I just used the NF cottage cheese because it's NF smooth so it blends well with the egg.
