Ingredients:
1.25lbs lean ground beef (I used sirloin)
two onions, chopped
three cans of black beans, not drained
two cans of dark kidney beans (not drained)
two cans of peeled plum tomatoes, whole or crushed
1/4 cup of chili powder
1 tsp salt
1 tsp of baking soda
grated cheddar cheeseDirections
In a tbsp of olive oil, sautee the onions until golden in an iron skillet. Transfer to chili pot.
Brown the ground beef thoroughly, add to chili pot. Add all the other ingredients and stir well. Remove any large tomato pieces and one cup of liquid in the chili and puree in a blender. Return it to the pot. Cook over low heat--and simmer for an hour. Adjust seasoning to taste.
Crushed red pepper may be added, or tabasco sauce.
Makes a LOT of chili!
Serve with a topping of grated cheddar cheese.
