PIZZA tonight!

And I don't mean Dominos!

Homemade pizza with cheese, tomato sauce, pepperoni, sausage, black kalamata olives, anchovies and artichoke hearts.

It all comes down to two basic things-- the crust, and the sauce. And I make both myself.

For the crust:

5-6cups flour
1 package of dry yeast
1.5 tsp of salt
1 tbsp sugar
1 cup of water
2 tbsps of peanut oil

Mix 2.5 cups of the flour with the yeast salt and sugar. Heat the cup of water with peanut oil in it to 125º-130º (sometimes hot hot tap water can be enough-- but check with a thermometer because too hot kills the yeast and too cold won't rise it)

Mix in the hot water/oil and add enough flour to make a soft but firm dough. Knead on a bread board for about7-10 min. then place in a greased bowl (I use oil) and turn the dough to coat it with oil letting it rest round side up. Cover the bowl with a cloth and let rise in a warm place for 1 hr.

Meanwhile you can make the sauce and get the ingredients ready.

For the sauce:

two sweet or yellow onions (sweet are best)
slice thinly in a food processor
1 big can of whole peeled tomatoes
salt and oregano to taste.

Sautee the onions in olive oil until they are golden and almost caramel looking. Add the can of tomatoes and chop with scissors in the skillet. Add salt, fresh basil(optional), oregano and let simmer until the wateriness has cooked down and the sauce is thick.

Roll out the dough to fit the shape of your pizza pan. I use a 16' circular pan made for pizza. It's perforated with holes and assures even cooking of the crust.

Spread the all tomato sauce evenly on the pizza. I use a big bag of shredded mozzarella or shred my own in the Cuisinart. Spread that over the sauce. Add your toppings.

For sausage I brown a tube package of breakfast type sausage.
Pre-sliced Pepperoni
Olives, suit your taste
Anchovies! a must (IMHO)
1 can of drained shopped artichoke hearts

Basically you can put anything you want on top of a pizza. Just make sure, if it's meat, that it's pre-cooked.
Sprinkle with Parmasean or Romano cheese.

Bake in a pre-heated 425º oven for about 25 min. Crust will be nicely browned.
