Buttermilk Spice Cake
spray oil
2 cups cake flour
3/4 cups sugar
3/4 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
2 Tbls. ground ginger
3/4 tsp. salt
3/4 cup brown sugar
8 Tbls. butter, softened at room temperature
3/4 cup buttermilk
2 eggs
Old-Fashioned Cream Cheese Frosting
1/2 pound cream cheese-- room temp
12 Tbls. butter -- room temp.
1 tsp. vanilla extract
3/4 pound powdered sugar (sifted)
Prepare your pan with spray oil, then cut a piece of parchment paper the size of the bottom of your pan (8x8)--and lay this on the bottom, spray again with PAM or something like it. (Do not flour the pan)
Preheat oven to 350º
In a large mixing bowl mix all dry ingredients.
Add buttermilk, softened to room temp. butter till creamy. Then beat in two eggs on a high speed.
Pour into prepared pan and bake for 50-55 min. or until a straw inserted in the cake comes out clean.
Let cool completely in the pan. When cool, invert onto a plate and lightly peel off the parchment paper.
Now on to the Frosting
Beat the softened butter and cream cheese together, add the sifted powdered sugar gradually in small amounts, then add vanilla. Beat till thick and creamy.
