PAN ROASTED SALMON WITH HERB CRUST

INGREDIENTS

12 -16 oz. salmon filet (I'm using frozen/thawed from Trader Joe's)

Crust
1 tbsp. olive oil
1 minced yellow or white onion
3 cloves garlic, minced
1 tbsp. lemon juice
2 tsp of rice vinegar
1/4 tsp dry mustard
2/3 c. bread crumbs
1/2 cup minced cilantro


CRUST: Blend all ingredients until thoroughly mixed.

SALMON: Heat saute pan and oil. Sear salmon with flesh side first. When brown, flip over. Place crust on flesh side. Place in 450 degree oven for 10 minutes. Remove from oven and serve with rice
