Blueberries for Sal

Garden Harvest

Fresh cucumbers and string beans picked from the garden.

Time to make a cold Cucumber Soup
Prep Time: 20 minutes


* 2 garlic cloves, minced
* 2 green onions, chopped
* 1/2 tsp. salt
* dash white pepper
* 2 Tbsp. olive oil
* 1 cup plain yogurt
* 2 cups buttermilk
* 1 cup chicken or vegetable stock
* 2 Tbsp. lemon juice
* a sprig of mint, crushed
* 1/4 cup of fresh chopped dill
* 4 cucumbers, peeled, seeded, and sliced

In blender or food processor, combine all ingredients and blend or process, using on and off function, until soup is of desired consistency. This soup should be chilled for a few hours before serving. Makes a big pot.
