Red Onion Soup

That's right. I said Red Onion Soup. If I were using yellow (preferably Vidalia) onions I'd call it the classic French Onion Soup. But I'm not. Instead, I bought three huge red onions and I'm making this:

3 huge red onions
2 cloves of garlic minced
4 tablespoons of butter (and ONLY butter, no margarine substitute, PUH-LEEEZE!)
2 cups of white wine
2 cups of beef broth
2 cups of chicken broth'
1 cup of apple cider
Bouquet garni made of fresh Thyme, Bay Leaf,fresh Cilantro

Melt the butter in a heavy soup pot. Use med heat.
brown the garlic and add onions. Stir and Stir and Stir and Stir until they are caramelized and a rich brown.
Add the wine and turn the heat on hi and cook down till the liquid is the consistency of syrup.
keep stirring
add broths, cider, and bouquet garni (I made mine by stuffing everything into a tea ball, but traditional cheesecloth works fine too)

turn heat to low and simmer for 20 min.

ladel into ovenproof bowls, top with croutons or french bread slice and swiss cheese and broil until bubbly.

Sorry for no pictures with this. I took some fine ones but my flash card seems to have finally given up on me. :-(
