Blueberry Cobbler in the Winter



A nice berry cobbler is one of the easiest things to make and is always a satisfying and wholesome dessert. When the fruit is in season, a real blueberry cobbler with fresh berries can't be beat.

But in the dead of winter, sometimes it's nice to have a remembrance of a warm day in July, So make this with frozen blueberries.

Preheat Oven to 400º

grease an 8"x 8" pan

1 bag of thawed frozen blueberries
empty blueberries into pan
dot with butter
sprinkle with a few tbspns of sugar


then take

1.5 cups of flour
2 teaspoons baking powder
1 tsp salt
1/2 cup of sugar

mix the dry ingredients together

then mix the following separately

1 egg beaten well
1/2 cup of milk
1 stick of butter melted

Add the wet ingredients to the dry and stir till smooth

and spread over the berries (sprinkle with some cinnamon-sugar)

baked for 25 - 30 min. until golden brown
best served warm with ice cream

Why don't you make a Marstokyo blueberries4sal calendar with each month having something appropriate and special for us ooking-challenged (and not) individuals to make and enjoy. All nthe things you have made so far look really good.
