Cheese Biscuits

These wonderful dinosaur cheese biscuits were made by cleanskies and she so graciously granted us the recipe to post here;

Yippeeeee

Cheese Biscuits (crackers in the US)

4 oz. of grated parmesan cheese OR aged cheddar
4 oz. of butter
4 oz. of flour

Mix the above ingredients into a paste on a board. (or quickly in a food processor on low)
Roll out thin, cut into shapes and bake on a greased tray in a medium oven(350ºF) for about 20 minutes.
They should not be allowed to brown too greatly.

If the butter you use is very soft try chilling the dough before rolling it. If you use soft but not REALLY soft butter you shouldn't need this step. In fact, the butter is too cold and it may take a few minutes before the dough warmed sufficiently to roll out. It's a very robust dough, keeping together quite well even when rolled to half a centimeter or less. They were fairly easy to lift intact with a spatula and place on a sheet of baking parchment, which is what I used instead of greasing the pan. Bake them on the lower tray of the oven at 180C/350F.

The biscuits pictured used aged cheddar instead of parmesean cheese.
