Funny how something you hated as a kid, can turn out to be delicious when you learn how to make it yourself. Here's the thing--a really GOOD meatloaf is LIGHT, and so smooth it melts in your mouth. It's flavorful, meaty and moist. And this recipe guarantees all of those.
(makes two loaves)
2.5 - 3lbs of lean ground beef (chuck or better)
one sweet Vidalia onion, finely minced
one tablespoon of garlic finely minced
1/2 cup of cilantro finely chopped
3 teaspoons of salt
1 cup of oatmeal (uncooked)
2 eggs (beaten)
2 cups of thick tomato puree
Mix all of the above together, press into loaf pans.
Preheat oven @ 350º and bake for an hour and fifteen minutes.
Let sit 5 minutes, then drain any fat, slice and serve.
Now, for MY secret! Process the ground beef in a food processor in small batches. Mix everything else with the meat in a large bowl. This makes the texture light and fluffy and "melt in your mouth" good.
